Crazy Good Creamy Mustard Sauce for Steaks

Sure, Valentine’s Day is just around the corner, but this easy and elegant recipe is not just for that. It’s perfect for any romantic dinner at any time (as long as your guest likes a big juicy steak as much as I do).

To start, you will need two steaks, cooked how you like ‘em.  I love mine grilled medium, with a little char on the edges (as John did so well with the steaks pictured below!).

For the sauce, you’ll need just three ingredients, plus a little salt and pepper.  Just three ingredients?  Yep … now that’s my kind of recipe.

Crazy Good Creamy Mustard Sauce

Makes about 1/3 cup (enough sauce for 2 steaks)

Although I love this sauce on a perfectly grilled filet mignon, it goes well on all kinds of things.  From roasted chicken to pan-seared lamb chops to baked salmon.  With butter and cream as the main ingredients, it’s quite rich, so you don’t need more than a tablespoon or two for each person.  It’s definitely best made the day of, and preferably, just minutes before serving.

Ingredients:

1 tablespoon unsalted butter

1/2 cup heavy whipping cream

1 1/2 tablespoons good-quality stone-ground mustard

Pinch of salt and pepper

Instructions:

Place all of the ingredients in a small sauce pan over medium heat.

Sauce2

As the butter melts, stir the ingredients until well-combined.  Reduce heat to medium low, so the sauce just barely simmers.

Sauce3

Continue stirring and cooking for about five minutes, letting the sauce reduce and thicken.

Remove pan from heat.  Pour sauce into a small serving dish or ramekin.

While sauce is still hot, spoon sauce over steaks (or chops, chicken, or fish).

Keep spooning :)

Okay, now serve immediately.

For Valentine’s Day, this dish would go very well with any number of veggie or potato side dishes.  As you are deciding on sides, my two recommendations would be to (1) avoid anything with a very strong flavor (like cilantro or mint) that might not mesh well with the mustard; and (2) avoid sides made with a lot of butter and cream (like mac n’ cheese, scalloped potatoes, and creamed spinach).  You could do one creamy side, but — with the rich steak sauce — two would make the whole meal a bit too heavy.
