Best Ever Cilantro Lime Sauce (Good on Everything! And I Do Mean Everything!)

Best Ever Cilantro Lime Sauce (Good on Everything! And I Do Mean Everything!)

There is something about the warm weather that just screams fish tacos.  This is how I like mine: A warm corn tortilla filled with grilled fish, avocado, crunchy cabbage, grated cheese, a squeeze of lime, and several spoonfuls of creamy tangy sauce.  Add chopped tomatoes or pico de gallo if you wish.

Fish Tacos with Cilantro Lime Sauce

Now, there are two things that take an okay fish taco to one that is ravishingly good:  (1) the fish, and (2) the sauce.  For the fish, get something wild caught and as fresh as possible.  It should smell like the ocean (not at all “fishy”), so do ask your fish-monger for a whiff.  For the tacos pictured above, I used wild-caught cod.  For the tacos below, salmon. Other good options include mahi-mahi, grouper, halibut, or tilapia,

Salmon Tacos with Cilantro Lime Sauce

As for sauce, this recipe is all you need to know.

Best-Ever Cilantro-Lime Sauce

Makes about 3 cups

I originally made this sauce for my Baja Fish Tacos but now I serve it with everything!  Seriously:  On salads, as a dip with raw veggies, on fajitas, over grilled fish, and with shrimp for dipping.  And lately:  Drizzled over halved fresh cherry tomatoes from the garden with chunks of avocado and a thinly sliced Serrano on top.  When there’s some left over on my plate, I mix it in with whatever else needs a companion, like rice or beans or corn or potatoes, or just mop it up with a tortilla.  Now you see why I make two cups at a time?  Even if you’re not quite as obsessed as I am, not to worry:  It keeps well in the fridge for several days.  Enjoy!

1 cup mayonnaise

1 cup Greek yogurt

1 cup cilantro (some stems are okay)

1 tablespoon extra virgin olive oil

Juice of 2 limes

Pinch of salt

Place all ingredients in the bowl of a food processor.  Blend until cilantro is thoroughly chopped and all ingredients are well combined.  Taste; add additional lime juice or salt as desired.  Serve with everything.

This cilantro-lime sauce goes especially well with my ground bison crispy tacos and chalupas compuestas. What do you like to serve it on? I’m always look for ideas!

For dessert, try my Dulce de Leche Icebox Pie! It’s divine (and so easy you won’t believe it!).

Rarely leave comments on recipe pages but this recipe is fantastic. Made this for fish tacos on my mothers birthday everyone loved it and few eyebrows raised while eating… I’m also a cook at a retreat center and used it today for chicken quesadillas. People flipped out and a few had to know what was in them…

    • Marie H. Saba June 1, 2013 at 11:27 am #

Hi Gerimaya! What a lovely note! Thank you for taking time to comment — it makes my day to hear that the sauce was such a hit! I love the idea of serving it with quesadills. Will have to try that. Thanks again, and happy belated birthday to your mom! Best, Marie

Hello Maria! I feel so lucky to have found this recipe linking from another of your great eats ideas. I had company of 8 for breakfast but a tight budget with which to feed them. So, I whipped up some huevos rancheros, but I wanted them to be a little more than ordinary and this sauce really did the trick. Thanks so much!

  12. Armando July 12, 2013 at 12:55 am #

I cannot greek yogurt (in another country). Any suggestions for a replacement? Double the mayonnaise?

    • Marie Saba
      Marie Saba July 12, 2013 at 12:21 pm #

Hi Armando! Thanks for your note! Any plain yogurt would work — do they sell plain yogurt where you are? Or, you might try soft cream cheese (maybe 4 ounces) plus some milk to thin it out a little. Doubling the mayo is also a good idea, although I would probably serve less at a time if it was just straight cilantro-lime mayo. Let me know how it goes! Best, Marie

Your recipe is great….but i added a couple cloves of garlic and a couple, few chipotle chiles in adobo sauce and it made it the BOMB!!! well at least for my taste buds.
    Thank you.

      Marie Saba February 17, 2014 at 12:10 pm #

Love this! Thanks! I keep mine on the mild side so my kids can eat it, but would love to try the chipotles soon for the adults! Very best, Marie

  15. Audrey September 8, 2014 at 3:40 pm #

Do you think it would work to make this sauce and put it in a crock pot with chicken and let cook for 4 hours?

    • Marie Saba
      Marie Saba September 9, 2014 at 6:54 pm #

Hi Audrey! Thanks so much for your comment! You know, I have never used the cilantro lime sauce in the crock pot. I’ve heard that dairy does not do very well in the crock pot (because it curdles), so I wouldn’t recommend it. Instead you might try a basic chicken marinade (such as Goya brand “Mojo Criollo”), and then serve the cilantro lime sauce on top. Hope this helps!! Very best, Marie

I have been craving fish tacos for awhile. I went to a local restaurant and was let down by the sauces. I saw this post in my email. I tried it for dinner. It was great! Hit the spot. Now I’m thinking of how else to use this!
    Thank you! thank you!

      Marie Saba June 22, 2015 at 10:33 am #

Hi Jen! Thanks for taking time to leave a note! I’m so glad you liked the cilantro-lime sauce; it is my favorite! Here are some other ways I use it: as a salad dressing on taco salads, as a toping for grilled chicken or fish, as a dip for veggies (raw carrots and cucumbers, or steamed broccoli), or as a dip for grilled, poached or boiled shrimp! Let me know if you find another way to use it! I’m always looking for inspiration :) Thanks again. Best, Marie

  20. Bonnie Bessire July 6, 2015 at 6:58 pm #

I never tried fish tacos before so I looked for what to serve on them & this sounded good. I also added a little curry powder. Incredible! The best thing to eat this on is a SPOON! Love it as a dip for pretzels or chips.

  21. Laurie December 4, 2015 at 2:00 am #

Ah, I made something similar last time for my fish tacos, but I didn’t use the processor! It tasted okay, but next time( next week) I’ll make it this way. Thanks

This was so easy and incredibly delicious. Can’t wait to have it on other foods, it went so well with our chicken tacos.

  28. Ati April 19, 2017 at 3:19 pm #

I used it with any taco … even my picky son eats it …
    Thank you for the recipe…

  29. Jen April 19, 2017 at 4:45 pm #

OMG…..this sauce is EPIC. I whipped up a batch earlier today for tonight’s chicken fajitas. It is AMAZING. I subbed sour cream for the Greek yogurt. I didn’t have any and I really don’t like Greek yogurt so I had to swap it out. I did add in some garlic as well. Phenomenal. Thank you for sharing this one.

This is delicious, my husband loved it too. Yes, I’ll put it on everything!
