Best Ever Cilantro Lime Sauce (Good on Everything! And I Do Mean Everything!)

There is something about the warm weather that just screams fish tacos.  This is how I like mine: A warm corn tortilla filled with grilled fish, avocado, crunchy cabbage, grated cheese, a squeeze of lime, and several spoonfuls of creamy tangy sauce.  Add chopped tomatoes or pico de gallo if you wish.

Now, there are two things that take an okay fish taco to one that is ravishingly good:  (1) the fish, and (2) the sauce.  For the fish, get something wild caught and as fresh as possible.  It should smell like the ocean (not at all “fishy”), so do ask your fish-monger for a whiff.  For the tacos pictured above, I used wild-caught cod.  For the tacos below, salmon. Other good options include mahi-mahi, grouper, halibut, or tilapia,

Best-Ever Cilantro-Lime Sauce

Makes about 3 cups

I originally made this sauce for my Baja Fish Tacos but now I serve it with everything!  Seriously:  On salads, as a dip with raw veggies, on fajitas, over grilled fish, and with shrimp for dipping.  And lately:  Drizzled over halved fresh cherry tomatoes from the garden with chunks of avocado and a thinly sliced Serrano on top.  When there’s some left over on my plate, I mix it in with whatever else needs a companion, like rice or beans or corn or potatoes, or just mop it up with a tortilla.  Now you see why I make two cups at a time?  Even if you’re not quite as obsessed as I am, not to worry:  It keeps well in the fridge for several days.  Enjoy!

1 cup mayonnaise

1 cup Greek yogurt

1 cup cilantro (some stems are okay)

1 tablespoon extra virgin olive oil

Juice of 2 limes

Pinch of salt

Place all ingredients in the bowl of a food processor.  Blend until cilantro is thoroughly chopped and all ingredients are well combined.  Taste; add additional lime juice or salt as desired.  Serve with everything.

    Rarely leave comments on recipe pages but this recipe is fantastic. Made this for fish tacos on my mothers birthday everyone loved it and few eyebrows raised while eating… I’m also a cook at a retreat center and used it today for chicken quesadillas. People flipped out and a few had to know what was in them…

    I cannot greek yogurt (in another country). Any suggestions for a replacement? Double the mayonnaise?

      Hi Armando! Thanks for your note! Any plain yogurt would work — do they sell plain yogurt where you are? Or, you might try soft cream cheese (maybe 4 ounces) plus some milk to thin it out a little. Doubling the mayo is also a good idea, although I would probably serve less at a time if it was just straight cilantro-lime mayo. Let me know how it goes! Best, Marie

    Do you think it would work to make this sauce and put it in a crock pot with chicken and let cook for 4 hours?

      Hi Audrey! Thanks so much for your comment! You know, I have never used the cilantro lime sauce in the crock pot. I’ve heard that dairy does not do very well in the crock pot (because it curdles), so I wouldn’t recommend it. Instead you might try a basic chicken marinade (such as Goya brand “Mojo Criollo”), and then serve the cilantro lime sauce on top. Hope this helps!! Very best, Marie

Here are some other ways I use it: as a salad dressing on taco salads, as a toping for grilled chicken or fish, as a dip for veggies (raw carrots and cucumbers, or steamed broccoli), or as a dip for grilled, poached or boiled shrimp!     I never tried fish tacos before so I looked for what to serve on them & this sounded good. I also added a little curry powder. Incredible! The best thing to eat this on is a SPOON! Love it as a dip for pretzels or chips.
