Dinner on the Cheap: Chalupas Compuestas

After five years of marriage and two kids, John and I like to joke that we are “business partners in a nonprofit.” Which is only funny because it’s sort of true.

As unromantic as that may sound, it is actually quite sweet. Because love during courtship is easy. But love during the chaos of parenthood? Now that love is deep.

As a partner in a nonprofit, it’s very important to be fiscally responsible.

So, for example, if one were to find a pair of shoes that one could not survive the summer without, then one would need to save money on dinner.

And whenever I need to cheap out on dinner, I always make something with beans and tortillas. These Chalupas Compuestas are my favorite.

    This is one of my favorite meals, I feel like the healthy salad on the top makes up for eating the delicious fried tortillas! It’s a give and take…kinda like your cheap food for nice shoes train of thought;)
