With summer here, doesn’t anything citrusy sound superb?
Like homemade cherry limeade,
And this citrus-marinated chicken.
The citrus marinade keeps the chicken light and juicy, and adds a hint of sweetness.
It’s so easy, too. Just whisk the ingredients together, and then marinate the chicken in the refrigerator for a few hours (I use a Ziplock bag for easy clean up).
Then pop it on the grill (or your grill pan) until cooked through!
You can serve the chicken plain, or with lemon-tarragon sauce or cilantro-lime sauce. Or slice it up and spread it over a salad. Or toss it into tortillas for tacos. Really, the possibilities are endless . . . and oh, if only summer was, too!
Easy Citrus Marinade for Chicken
Ingredients:
1 cup orange juice
Juice of 1/2 lemon
Juice of 1/2 lime
1 Tablespoon brown sugar
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and Pepper
Instructions:
Whisk the ingredients together in a bowl. Use to marinate chicken in the refrigerator for 3-4 hours. Discard marinade when through.
