Mole can be intimidating, but it doesn’t have to be. Really, you can make authentic chicken in mole in less than one hour by following these five simple steps: (1) ROAST, (2) FRY, (3) SOAK, (4) BLEND and (5) STRAIN. If you can get these steps down, you just might be making mole from memory before you know it!! (Unless you are pregnant or have young children, in which case you will never do anything from memory ever again. Ever.)

So excited to make this, Marie. I have been thinking about it since you posted it! I do have a few dumb questions….where do you find all the unique chilies? I was at an HEB that has lots of Mexican stuff but I could not find mulato chiles. And all I found were dried. Is that what we use?

Hi Chelsea! Not a dumb question at all! I have been meaning to post links to the chiles but just keep forgetting :) So, I actually bought the peppers on Amazon Prime! I’ll post the links in a sec. You can make the mole with other chiles available at HEB (4 ancho, 4 guajillo, and 1 arbol) but the ones I list on the recipe are called the “holy trinity” of red mole, so if you have time for ordering and shipping, I recommend it. Another alternative might be to check out a Mexican market or Fiesta grocery … Amazon was just easier for me than driving around! Thanks for the note Chelsea!
