Ingredients
- For the apple filling:
- 6-8 medium-sized apples, sliced thin (about 1/8 inch thick)
- 1 teaspoon cinnamon
- 2 teaspoons lemon juice
- 3 tablespoons brown sugar

- For the topping:
- 1 cup brown sugar
- 1 cup unbleached white flour (or ½ cup white and ½ cup wheat)
- 1 cup old-fashioned oats
- 1 teaspoon cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- 2 teaspoons vanilla
- 10 tablespoons cold unsalted butter, cut into tablespoons
- ***
- For serving:
- Vanilla ice cream or whipped cream
Instructions
- Preheat oven to 375 degrees F. Butter an 9 x 13 x 2 inch glass baking dish.
- Cut the applies into thin slices (about 1/8 inch thick) and place them in a medium-sized bowl. Add the cinnamon, lemon juice and brown sugar. Toss to combine and then pour into the buttered baking dish. The apples should almost fill the dish, with a little room at the top left for the topping. If the apples happen to reach over the top edge of the dish, take some out and eat them :)
- For the topping, place brown sugar, flour, oats, cinnamon, nutmeg, salt, vanilla in a medium-sized bowl. Stir to combine. Add the butter. Using a pastry cutter or your fingers, work the butter into the flour mixture until it is well-blended and crumbly.
- Sprinkle the topping over the apples in the baking dish. (Don’t worry if the topping is a little higher than the edge of the baking dish; it will sink slightly as the apples cook.) Bake for 35 minutes, or until the apples are tender, topping is crisp, and the juices are bubbling. Let cool for 10-15 minutes. Serve warm with a big scoop of vanilla ice cream or whipped cream!
- Make Ahead Option: You can make the topping up to 1 day ahead. Store, covered, in the refrigerator.
