My Mom’s Honey Carrots

Our family splits up the cooking duties when we’re all together for a holiday. Like on Thanksgiving, the boys are in charge of mashed potatoes; my dad handles the turkey and stuffing; my sister-in-law brings roasted veggies; I make the pies; and my mom makes these delicious honey carrots. (If you’re wondering what John does, he’s usually in charge of the really hard stuff . . . like putting on music, sampling food and making sure everyone has a beer. No wonder my family loves him ;)

But no need to wait for a holiday to try the honey carrots! They only take about 15 minutes to make, and there’s no chopping or stirring required, so they’re perfect for weeknight dinners.

You’ll see in the recipe you can use 1-2 Tablespoons butter and 1-2 Tablespoons honey. I definitely err on the side of 2 Tablespoons of both, but you might start out with less and see how you like it. You can always add more if needed :) As far as serving, honey carrots go well with almost anything. The picture below is Pesto Pork Tenderloin, Roasted Green Beans and sweet buttery honey carrots.
