No-Bake Peanut-Butter Energy Bites

I remember making peanut-butter balls similar to these as a kid: Getting my hands all messy with honey and peanut butter, rolling each sticky mound into a little ball, and then biting into one with a big glass of milk. Now, as a parent, I love these because they are nutritious (high protein, high fiber, low sugar, no fake stuff), and super easy to make (Jack gets to do most of the pouring, mixing and rolling by himself). Plus, they are always ready to enjoy … just sitting in the fridge in an airtight container … which makes them perfect for a quick breakfast or an afternoon snack.
