I used to make salsa verde from scratch. Back when I used to have time for things like that! Now, with two young kids at home, I’m a sucker for shortcuts.
For this recipe, here’s the shortcut: you start with a bottle of basic store-bought salsa verde – a simple mixture of tomatillos, onions, jalapenos, garlic, and salt. Store-bought salsa verde is very average on its own. But when you add my three secret ingredients (cilantro, avocado, and lime) and a few whirrs in the food processor, that simple salsa becomes so good you’ll want to eat it by the spoonful!
Serve with tortilla chips for a gluten-free snack, or on top of scrambled eggs, breakfast tacos, grilled chicken or fish, dinner tacos, or just about anything else!
